Vegan Gluten Free Roasted Tomato, Pepper & Onion Pasta

I made this pasta dish for my moms birthday the other night and it turned out fantastic!! I used gluten free brown rice pasta and was surprised to find that it was much lighter than regular pasta. Make this pasta for the vegan in your family!

Ingredients: 
1 package brown rice pasta
1 medium container vine strawberry tomatoes 
1 red pepper
1 yellow pepper
1 orange pepper
1/2 yellow onion
4 cloves garlic
1 bundle fresh asparagus
Handful of kalamata olives, roughly chopped
1 lemon
1 tbsp Herbes de Provence
Olive oil
1/2 tbsp red wine vinegar
Freshly cracked salt & pepper


Directions:
Preheat oven to 375.
Cut your tomatoes in half, slice your peppers & onion into strips and place on a baking sheet. Cover in olive oil, salt & pepper, and Herbes de Provence. Roast for approx 30minutes.


In a large pan, on medium heat, saute your garlic. Take a vegetable peeler and make ribbons out of your asparagus, add to the pan. Squeeze half the lemon over the asparagus and add red wine vinegar. This will steam your asparagus and give it excellent flavor!


In a large pot boil water for pasta. Cook pasta until al dente. Add to pan with asparagus and drizzle with a bit of olive oil.


Once your vegetables are done roasting add them to your pan with the pasta. Squeeze the remaining half of the lemon over your pasta. Add olives and serve!
