White Bean Salad with Lemon Vinaigrette |
Ingredients:
Salad
2 cans Cannellini beans
1 can chick peas
1 can sweet corn
3 tomatoes, chopped
2 avocados, diced
1/2 purple onion
Dressing
1/2 cup fresh squeezed lemon juice & zest from lemons
2 tbsp good olive oil
4 leaves fresh basil, thinly sliced
1 tbsp Dijon mustard
2 tsp red wine vinegar
Lots of fresh cracked pepper & salt, to taste
Directions:
In a small bowl mix the dressing ingredients together. Whisk until well blended.
In a large serving bowl mix together the salad ingredients, minus the avocado & basil. Add the dressing and toss lightly to coat evenly. Add the avocado & basil. Serve and enjoy!
