Spicy Chicken Lettuce Wraps

These lettuce wraps can very easily be made vegetarian! With or without meat they are a tasty, refreshing and healthy meal!
(Use only half the ingredients if you do not want leftovers, but let me tell you that it does make a fantastic lettuce bowl for lunch the next day!)

Ingredients:
1 head of iceberg lettuce
2 chicken breasts
1 bag Asian slaw
1/2 tsp sesame oil
1tsp rice wine vinegar
1/2 bag chow mein noodles
Sesame seeds
Mushrooms, as many as you like, cut into 1/4
Iceberg Lettuce
Directions:
Marinade chicken overnight (recipe below) as the marinade will flavor the whole dish.

Cut chicken into small chunks and saute (marinade as well) on med-high until cooked all the way through. Add mushrooms, sesame oil, rice wine vinegar and cook for 4-5mins then reduce heat to minimum. 
Add Asian slaw and chow mein noodles at the very end so that they slightly steam yet stay crunchy. Top mixture with sesame seeds before serving.

Assemble by piling your chicken mixture onto lettuce leaves, roll up and enjoy!
