Orzo with Roasted Veg Salad

This is one of my absolute favourite salads!! Orzo with roasted vegetables makes a lovely lunch, is perfect for a pick-nic and can be enjoyed hot or chilled. I make this salad at least once a month and when I do I make a huge bowl to share with family and to have for lunches throughout the week.
Orzo with Roasted Veg Salad

Ingredients:
All of the ingredients below can be roughly how much to use. Feel free to use what works for you!
1 bag of Orzo
1 lemon
Olive oil
1/2 red onion
10 red potatoes
8 carrots
beans or asparagus
Greek seasoning
Freshly cracked salt & pepper
Asparagus
Directions:
Boil a large pot of water with lots of sea salt and add Orzo. Cook until al dente. Strain and add to a large serving bowl.
Cut your potatoes and carrots to desired size.
In the oven @ 400 roast potatoes and carrots in lots of olive oil, salt and pepper. When your potatoes and carrots are almost done, approx 30minutes, add your green beans or asparagus to the roasting pan for the final 10-15minutes.
Roasted Potatoes & Carrots
Mix your roasted vegetables with orzo and add lemon juice over top. Chop 1/2 red onion and add to salad. Add lots of olive oil and Greek seasoning.
