Best Ever Vegetarian Chili

This is a very healthy, vegetarian alternative to chili. It's my moms recipe and she makes it all the time. It's a must try!
Best Ever Vegetarian Chili

Ingredients:
2 large onions chopped fine
2 tbsp. olive oil
1 tbsp sea salt
4 garlic cloves finely minced
2 tbsp. chili powder
1 tbsp. cinnamon
2 tbsp. molasses
1 tbsp. ground cumin
1 tsp. dried red pepper flakes
3 red peppers chopped
3 orange peppers chopped
3 cans of tomatoes chopped
3-4 cups cooked red kidney beans

Directions:
Cook onions in olive oil & salt over medium heat for 10-15 minutes, until starting to brown. Add the garlic and cook for a couple of minutes. Add chili powder, cumin, red pepper flakes & cinnamon (important to cook before any liquid is added, it releases flavours of the spices). Then add the molasses & peppers & cook for 10 minutes. Add tomatoes to the pot & bring to a boil; reduce the heat and simmer uncovered for 30 minutes, stirring occasionally. Add cooked kidney beans in last 10 minutes of cooking. 
Best Ever Vegetarian Chili
Top with fresh basil or parsley. Serve!
