Glazed Doughnut Muffins |
For the muffins:
1/4 cup butter
1/4 cup vegetable oil
1/2 cup granulated sugar
1/3 cup brown sugar
2 large eggs
1 1/2 tsp baking powder
1/4 tsp baking soda
3/4 tsp ground nutmeg
1 tsp cinnamon
3/4 tsp salt
1 tsp vanilla extract
2 2/3 cups all purpose flour
1 cup milk
For the glaze:
3 tbsp butter, melted
1 cup icing sugar
3/4 tsp vanilla
2 tbsp hot water
Directions:
Preheat oven to 424 degrees. Line 12 muffin cups or spray with a non-stick cooking spray.
In a medium mixing bowl beat together butter, vegetable oil & sugars till smooth. Beat in eggs, one at a time.With your mixer on low speed add in your baking power, baking coda, nutmeg, cinnamon, salt & vanilla until just combined.
Stir in your flour & milk until just combined. Do not over mix!
Spoon batter into cups 3/4 full.
Bake 15-20 minutes, checking after 15 minutes to see how far along your muffins are.
Cool muffins in the muffin tin for 5 minutes and then transfer to a wire rack for an additional 15 minutes to cool before glazing.
To make the glaze:
In a small bowl mix together your melted butter, icing sugar, vanilla & water. Whisk until smooth.When muffins have cooled, dip the muffin top into the glaze and allow the glaze to harden. Once hardened, dip the muffin a 2nd time and allow to fully cool and harden. Serve & Enjoy!
