Orange Muffins

Orange Muffins
Now I know I did mention previously that I cannot bake but recently I have become quite obsessed with it! I am still learning but at least now the things I am making are turning out edible :)
I made these orange muffins over the weekend and they were a HUGE hit in my house! I will warn you tho, this recipe does contain quite a bit of butter! but that's not always a bad thing!
I cannot take credit for the recipe as I found it online at www.pinterest.com but had to share it with ya'll.

This recipe will make 2 dozen muffins.


Ingredients:
For the muffins:
1 cup of milk
1/2 cup freshly squeezed orange juice
1/2 cup sour cream
2 large eggs
1 1/2 cups unsalted butter, melted
3 1/2 cups all purpose flour
1 cup sugar
1 1/2tbsp baking powder
1/2tsp salt
Zest of 1 orange

For the glaze:
1/4 cup freshly squeezed orange juice
1 1/2 cups icing sugar
2tsp orange zest

Directions:
Preheat your oven to 350 degrees.
In a medium mixing bowl combine the milk, orange juice, sour cream, eggs & melted butter. Whisk together to blend.
In a large mixing bowl combine the flour, sugar, baking powder & salt. Stir to blend.
Pour the wet ingredients into the dry ingredients and mix until just incorporated. Fold in the orange zest.

Line your muffin tins with paper liners or spray with a non-stick cooking spray.
Divide your batter evenly between your muffin tins. Bake about 18-20 minutes. Let cool in the pan 5-10 minutes to allow your muffins to set up nicely, then transfer to a wire rack or baking sheet.
To make the glaze, combine the orange juice, icing sugar & orange zest in the small bowl. Whisk together until smooth. Feel free to add more orange juice if necessary to get the desired thickness. Drizzle your glaze over the muffins and for a little extra I like to sprinkle a bit of sugar over top.
Let cool and serve!
