BBQ salmon with lemon dill sauce

My boyfriend caught a gorgeous Chinook salmon so I had to bbq it! What a perfect way to end the summer.

Lemon dill sauce
Ingredients:
1/2 cup minced shallots
2 cloves minced garlic
1/2 cup dry white wine
Juice of 1 lemon
1/4 cup chopped fresh dill
1tsp Dijon mustard
1/2 cup heavy cream
5tbsp unsalted butter
Salt & pepper to taste
Directions:
In a small saucepan combine shallots, garlic, wine & lemon juice. Bring to a boil. Stir in the dill and cook for approx 3 mins.
Whisk in the mustard & cream, continue to cook for another 3 mins.
Add the butter and continue stirring until melted.
Season with salt & pepper


BBQ salmon  (with skin on)
Directions:
Preheat bbq to minimum, all burners
Place salmon on tin foil, coated with a non stick cooking spray 
Pat salmon fillets dry, season with fresh cracked pepper & salt  (smoked salt is very tasty with fish)
Cover fillets with lemon dill sauce, top with lemon slices!
Place salmon on the grill and let cook for 12 - 15minutes
Enjoy!
