The Ultimate Veg Burger (vegan)

The Ultimate Veggie Burger

Ingredients: 
1 white or red onion – finely diced

2 garlic cloves – minced

½ tsp. chili flakes

1 tsp. cumin

1 tsp. dry oregano

2 tsp. sea salt

1 tsp. cracked pepper

2 Tbsp. balsamic vinegar

2 cans chick peas – save liquid

1 lemon - juiced

¼ cup natural peanut butter or tahini

2 cups rice cracker crumbs – 1 cup reserved for coating

2 cups cooked brown rice - cooled

1 bunch of green onions – finely chopped
½ cup Italian parsley or cilantro – finely chopped
Directions:
Sauté onion until translucent; add all spices and garlic and sauté for an additional 5 minutes. De-glaze pan with balsamic vinegar and cook for 5 more minutes. In food processor blend chick peas, some liquid, lemon juice, peanut butter, rice cracker crumbs and cooled rice. Place chick pea mixture in large mixing bowl and add onion mixture. Stir in chopped green onion and parsley. If the mixture is dry add a bit more of the chick pea liquid until the right consistency for burgers. Refrigerate for at least 2 hours or overnight. Make into patties and coat in rice cracker crumbs. 
The Ultimate Veg Burger
Sauté in olive oil on both sides until crispy golden brown. Serve with sweet chili sauce or tarragon mustard. Enjoy!
