Corn Tortillas with grilled Corn & Coleslaw

This is an excellent vegan & gluten free Mexican recipe that my mom came up with. You could very easily add chicken, beef, pulled pork or fish if that is what you prefer.
Corn Tortillas with grilled Corn & Coleslaw

Ingredients:
Corn tortillas
Mexican rice (recipe below)
Sesame coleslaw (recipe below)
Grilled corn
Salsa
Lime
Cilantro

Mexican Rice
Ingredients: 
1 white onion, finely chopped
1 tbsp olive oil

1 tsp sea salt

1 garlic clove, minced

1 can tomato paste

1 tsp cumin

Grilled corn
3 cups of cooked rice
Directions:
Sauté onion and salt in olive oil until translucent; add garlic and cumin and sauté for an additional 5 minutes. 
Add cooked rice, grilled corn and tomato paste; heat through.

Sesame Coleslaw
Ingredients: 
1 package of coleslaw

Dressing:

2 Tbsp olive oil

2 Tbsp sesame oil

2 Tbsp rice wine vinegar

1 tsp sea salt

½ tsp cracked pepper

2 Tbsp sesame seeds
Directions:
Whisk oils and vinegar together; add salt & pepper and pour over coleslaw. Sprinkle with sesame seeds.

Wrap corn tortillas in a tea towel and microwave for 1 minute. Throw on heated grill and brush with olive oil; grill both sides.

Assemble tortillas with Mexican rice, coleslaw, salsa, cilantro and a squeeze of fresh lime.
