Orange Muffins

Orange Muffins
Now I know I did mention previously that I cannot bake but recently I have become quite obsessed with it! I am still learning but at least now the things I am making are turning out edible :)
I made these orange muffins over the weekend and they were a HUGE hit in my house! I will warn you tho, this recipe does contain quite a bit of butter! but that's not always a bad thing!

Pickled Veg Medley (Giardiniera)


Lately I have become absolutely obsessed with canning! When I saw this recipe on www.pinterest.com I knew I had to make it! This recipe was very easy to make for someone with little canning experience. I have my fingers crossed that after the 2 week waiting period for the flavors to blend these vegetables will actually taste good!

Elk Stew

Recently I was lucky enough to receive a package of stewing elk from a family member (thanks uncle Al!) so I decided that this would be my first attempt at cooking wild game! Elk is a lean alternative to most red meats and since it is wild it is not treated with growth hormones or chemicals. If you enjoy the taste of elk this recipe is a must try! Almost all of the ingredients that I used in this elk stew recipe are local.

Cabelas Jalapeno & Cilantro Mustard

On a recent trip to Spokane my boyfriend dragged me into a Cabelas outdoor store and to my surprise they had a huge specialty food section! I found a jalapeno & cilantro mustard that I just had to try! turns out .. it's excellent!! This mustard is made by Cherith Valley but is sold at any Cabelas store.
This condiment is definitely one of my new favorite things. Now the only problem is that I wish I had bought more!

Spring Wine Fest 2012

It's that time of year again!! Spring wine fest in the Okanagan has finally arrived!

My mom and I will be pouring for Bonita's Winery, located in Summerland BC, this Friday, May 4th @ The WestJet Wine Tastings! This fabulous event will be held at the Rotary Centre for the Arts at 7PM.

The perfect spring salad!! I made this white bean with lemon vinaigrette salad for my girlfriend's baby shower this weekend and it was a huge hit! Besides looking amazing with all the bright colours it tastes very fresh and is a the perfect light dish for any picnic, potluck or party this spring!

Vegan Gluten Free Roasted Tomato, Pepper & Onion Pasta

I made this pasta dish for my moms birthday the other night and it turned out fantastic!! I used gluten free brown rice pasta and was surprised to find that it was much lighter than regular pasta. Make this pasta for the vegan in your family!

Greek Sole with Parmesan Asparagus & Herb Wild Rice

One of my favourite things to do in the summer, or whenever I can track them down, is to purchase fresh seafood from a local seafood truck! They bring all of the seafood up to Kelowna from the coast and sell it out of an old school bus! Everything is extremely fresh and freezer packaged. It's an excellent way to enjoy ocean fresh seafood anytime.

Spicy Sausage & Pepper Manicotti

Ingredients:
1 box Manicotti noodles
1 container ricotta cheese
1 1/2 pounds spicy Italian sausage
Homemade or 1 can of your favourite spaghetti or marinara sauce
1/2 green pepper, chopped
1/2 red pepper, chopped
3 cloves garlic, minced
1 shallot, finely chopped
2 hand fulls of freshly grated parmesan cheese
Olive oil
Freshly cracked pepper and sea salt 

Directions: 
Saute shallot and garlic in 1tbsp of olive oil over medium heat. Add sausage and cook until done.
In a bowl combine ricotta cheese, 1 hand full of parmesan cheese, freshly cracked salt & pepper and green & red peppers. 
Once the sausage is fully cooked add to ricotta cheese mixture.
In a large pot boil water with lots of sea salt. Add manicotti noodles in batches so that they do not stick to each other while cooking. Cook noodles until al dente, this will make them easier to fill with your sausage and ricotta mixture.
Add a couple tablespoons of your spaghetti/marinara sauce to the bottom of a large glass baking dish.
Fill each manicotti noodle with the sausage & ricotta mixture and place into the baking dish.
Cover the manicotti with the rest of the spaghetti/marinara sauce and sprinkle another hand full of parmesan cheese over top.
 Bake @ 350-375 for approx 40minutes.
(Serve with garlic bread & Cesar salad!)

Pork Rack Roast

Ingredients:
1 rack of pork
2 tbsp honey
1/2 cup orange juice
2 tbsp olive oil
3 cloves garlic, minced
1 tbsp cracked coriander seed
1 tsp cumin
1 tsp chili powder

1 tsp onion powder
Freshly cracked salt & pepper

Directions:
Put pork rack into a zip-lock bag.
Whisk together honey, orange juice and olive oil, pour over pork rack. Add seasoning and place in the fridge overnight.
Preheat oven to 450.
Place pork on roasting rack and roast for 10-15mins, or until rack turns and deep golden brown.
Reduce heat to 350 and cook for 50mins or until pork reaches an internal temp of 142 degrees.
Cut chops and serve!

This is one of my absolute favourite salads!! Orzo with roasted vegetables makes a lovely lunch, is perfect for a pick-nic and can be enjoyed hot or chilled. I make this salad at least once a month and when I do I make a huge bowl to share with family and to have for lunches throughout the week.

These lettuce wraps can very easily be made vegetarian! With or without meat they are a tasty, refreshing and healthy meal!
(Use only half the ingredients if you do not want leftovers, but let me tell you that it does make a fantastic lettuce bowl for lunch the next day!)
